The Bountiful Bosch Kitchen
Every season has its signature feasts and celebrations, which are tied to family traditions and heritage recipes. Mashed potatoes are well-loved, but typically they are one of the last things people prepare. And there’s so much to do at the last minute!
Give this do-ahead, time-saving recipe a try. Its two unique features are the do-ahead preparation and using a crock pot to reheat and keep the potatoes at the perfect serving temperature. We hope this easy recipe inspires your holiday cooking endeavors and helps you enjoy the exceptional performance of your Bosch appliances.
DO-AHEAD CROCK POT MASHED POTATOES
5 lbs. Russet or Yukon Gold potatoes
1½ sticks butter, cut into pieces
1 8-oz. pkg. cream cheese, softened
½ to 1 cup milk or half and half
Salt and pepper to taste
Peel the potatoes and cut them into quarters. Place in a large pan with about an inch of salted water. Put the lid on and bring to a boil. Then lower the heat to a simmer and cook the potatoes until they are easily pierced with a fork.
Drain the pan, return the potatoes in the pan to the cooktop, and turn the heat to low. Using a potato masher, mash the potatoes until most of the steam has escaped and the potatoes are uniformly mashed. Turn off the heat.
Add the butter and cream cheese and mash again to blend it all together. Now add enough milk or cream to make the potatoes the consistency you want—remember you can always add a little more just before serving if you decide that they are too stiff. Finally, season to taste with salt and pepper.
Now, transfer the potatoes to your crock pot and allow them to cool before storing the crock pot in the refrigerator with the lid on. On Thanksgiving Day, remove crock pot from the refrigerator, plug it in and put it on low a couple of hours before you plan to serve.
Variation: If you want to trim the calories from this recipe, you can use chicken broth instead of milk and low-fat cream cheese instead of regular cream cheese. Remember, gravy is usually served with the potatoes, so a little calorie trimming will go unnoticed.

Time-Saving Cooking Tips
Line roasting and baking pans with parchment paper to expedite clean-up. Use it when roasting vegetables, baking chicken and fish in addition to rolls, cookies and other baked goods. Just be sure you don’t exceed the parchment paper guidelines for oven temperature.
When baking a pizza in your Bosch oven, try pre-heating the pizza stone on the top rack for about 30 minutes. This allows the stone and oven lining to thoroughly pre-heat. Bake the pizza on Bake Mode on the top rack. The enamel in the top of the oven will radiate heat down onto the pizza. This facilitates fast browning of the top before the bottom crust gets too crunchy.
