Yes, classic latkes — or fried potato pancakes — are made from, well, potatoes. This year, mix things up a bit by using butternut squash, apples, and beets instead of regular old potatoes. The combo of fall flavors makes this latke variation irresistible. They’d even make a great substitute for mashed potatoes on the Thanksgiving table!

For another crowd-pleaser, try swapping in sweet potatoes instead of regular spuds. 

Do the Mashed Potato

Use celery root (it’s a root vegetable related to parsnips) in lieu of potatoes for a healthier, lower-carb mash.
