Radish Baguette with Chive Butter and Salt (Keith Dresser)

A Trip to the Farmers’ Market

FROM Keith Dresser, Executive Food Editor, Cook’s Illustrated

Farmers’ markets here in New England have been open for a few weeks, but now that it is early June they are starting to hit their stride with a bountiful mix of spring and early-summer produce. Like many cooks, I look forward to local asparagus more than any other spring vegetable. There’s a good chance that by now the stalks are a little chubbier than the slender, early-season samples, but they are perfect for grilling. Especially with garlic butter.

Ruby-red rhubarb is also highly sought after this time of year. This is especially true because strawberry season is just getting underway. You can’t beat the pairing of tart rhubarb and sweet strawberries—a combination that is even better when baked in a pie. If sweets aren’t your thing, I highly recommend trying rhubarb in salad. When mixed with celery and radishes, rhubarb creates a refreshing salad with plenty of crunch and a tart-spicy finish.

Speaking of radishes, there should be many varieties to choose from right now. Eating them raw with a smear of softened butter (hopefully from the market) and a sprinkle of coarse salt is always a good choice. But I’ve also recently discovered that radishes are great when roasted and topped with their spicy greens.
