View this email in your browser Meat the team — Tom Customer experience manager & true foodie Tom joined the team this year. Here he shares his passion for food, and some delicious Heartier recipes. What do you enjoy about working at Heartier? I've always had a huge interest in food, spending any spare time I have experimenting in the kitchen; cooking everything from real comfort food to trying my hand at some more complicated techniques and recipes. I was lucky enough to grow up with a fantastic local butcher very close to me, a trip there every Saturday morning to pick up the meat for our Sunday roast was always exciting. These factors combined to make Heartier a perfect fit for me - a chance to work with butchers across the country to provide high quality, ethically sourced meat to anyone who wants it. Favourite recipe for... Cooking for others: A platter of beautifully cooked tomahawk steak with whipped goats cheese is a great (and pretty quick) way to show off in the kitchen! Quick weeknight meal: Tandoori chicken with a red onion salad - quick, easy and healthy. Treat: Flatiron steaks with guasacaca - I am a millennial after all, so need to get some avocado involved! Comfort food: Vietnamese style lamb shank is the perfect Sunday evening comfort food, just chuck it in a pan and leave to cook. Super easy, even on a hangover… Tell us about something exciting coming up at Heartier... Recipe - Pork loin roast Save 20% - SPRING20 View this email in your browser Pork loin & perfect crackling Serves: 4 - 6 Prep time: 15 mins Cook time: 1 hr 15 mins Total time: 1 hr 30 mins Ingredients: 1kg Heartier pork loin roasting joint 2 large onions 2 tablespoons olive oil 2 tablespoons sea salt 1. Slice your onions and place in the bottom of a large roasting tin. 2. Score the fat on the pork with a sharp knife at 1cm intervals, pat dry with some kitchen towel and rub 1 tablespoon of sea salt & olive oil into the skin. 3. Cover with tin foil and leave at room temperature for 30 minutes. Meanwhile, heat the oven to 240C/220C fan. 4. After 30 minutes pat the skin dry again with some kitchen towel and rub the remaining salt & oil into the scored fat. Bake in the oven for 15 minutes. 5. Turn the oven down to 180C/160C fan and roast for a further hour. 6. Rest for 10 minutes before serving. Treat Mum next weekend... View this email in your browser Meat the team — Nick Nick co-founded Heartier. Here, he tells us why he's passionate about the Heartier mission — and how to make a mean chilli con carne Why Heartier? We started Heartier because we were fed up with brilliant local butchers shutting down when they had the tastiest produce going. There's nothing better than a thick cut steak or beautiful roasting joint from the butcher. The taste is incomparable — we want everyone to experience the joy of great meat. Our mission is to get as many of these fantastic producers online as we can, so that eating better meat becomes the easy choice. I believe that free-range and native breed produce is the way forward and, if you're reading this, you probably agree! Favourite recipe for… Cooking for others: If you ever come around to my house for dinner, there's a pretty good chance you'll get beef shin ragu. It's a slow cook wonder, which means the meat is super tender. It quite literally falls apart. My wife's family live in Italy and I use a classic hand me down recipe, watch this space and I'll let you in on the secret in the coming months... Quick weeknight meals: A rump steak, cooked for 2 mins on each side before slicing and serving on a bed of rocket and shaved Parmesan. Ready in 5 mins and unbeatable. Treat: I'm half Scottish, so haggis is a guilty pleasure but Burns night doesn't come around often enough. I've currently got one stashed in the freezer in case of emergencies. Comfort food: Chilli con carne every time. With Heartier steak mince, heaps of smoky paprika and lashings of soured cream and cheese. Heavenly! What are you excited for at Heartier? This year is a big one for us. We're launching our new subscription platform in a matter of weeks to make it super easy for you get hold of amazing meat without the hassle. I can't wait to show you all. I'll also be out on the road finding new butchers to work with so that we can deliver increasingly locally to each of you.
