An early Happy Valentine's Day to everyone!

It's 2020 so we're all about loving ourselves (I mean, have you heard 'Soulmate' by Lizzo?!) Whether you're coupled up and celebrating, celebrating with your kids, or single and having a Galentine's Day or self-love day, do YOU! 

If you're looking to cook for someone, there are so many great recipes on the blog that can be made into an 'intimate' dinner night in. A few of my favorites: 
Lu and I will be going out in NYC on Friday night for a Valentine's Day date night, and I'm excited to get dressed up, put on a non-nursing bra, and be with just him, even if it's only for a few hours!

weekly meal plan for the week of 1/19
Welcome to our family's weekly meal plan! For breakfasts and dinners, the meals are the same for the adults and the kids! Lunches are made especially for the kids, but sometimes we use leftovers from dinners, too! 
Breakfast: Sweet Potato Blueberry Loaf with Almond Butter + Clementine
Lunch: Carrot Tots + Roasted Broccoli + Apples 
Snack: Spinach Blender Muffins  
Dinner: Cauliflower and Potato Curry with Peas + Toast

Breakfast: Eggs + Toast with Kitehill + Raspberries   
Lunch: Vegetarian Pressure Cooker Soup (blog testing) 
Snack: Leftover Blender Muffins  
Dinner: Vegetarian Sweet Potato Rice Bean Chili + Avocado  

Breakfast: Waffles
Lunch: Freezer Bolognese + Purple Potato +  Cheesestick 
Snack: Sweet Potato and Blueberry Loaf
Dinner: Brussels Sprouts Latkes with Salmon and Roasted Chickpeas 

Breakfast: Zucchini Oatmeal with Bananas/Blueberries + Almond Butter/Hemp Seeds   
Lunch: Chicken Sausage + Pea Guacamole + Roasted Japanese Potatoes 
Snack: Yogurt with Strawberries
Dinner: Vegetable Shawarma Bowls

Breakfast: Blender Muffins + Blueberries  
Lunch: Broccoli Grilled Cheese + Cucumbers/Hummus + Energy Bite
Snack: Apple with Almond Butter
Dinner: Pizza Night

Air Fryer Salmon Fish Sticks 

Makes 4 fish sticks 

1 egg, beaten
1 teaspoon water 
1 cup panko bread crumbs + more, if needed
1/2 teaspoon garlic powder
1/4 teaspoon paprika
salt and pepper
8oz salmon, sliced into 4 "sticks"
cooking spray


Preheat the air fryer to 400 degrees. Meanwhile, setup the egg wash and dredge. In one shallow dish, add the egg and whisk it together with the water. In another shallow dish, add the panko breadcrumbs, garlic powder, paprika, salt and pepper. Mix the panko mixture together so the seasonings spread evenly. 

With one hand, roll a piece of salmon in the egg wash and lay it in the panko mixture. With the other hand, roll the salmon in the panko. Lay on a plate and repeat with the remaining salmon. 

Spray the bottom of the air fryer tray with cooking spray. Lay out the breaded salmon, spray the tops with cooking spray and cook for 10 minutes. Serve warm.
