[Keiko#14] Puff Pastry

Hi ,
Did you try the cream puffs from the previous
email? :-)
They are simple but delicious...
There's another type of pastry that has a similar
name but is completely different:
Puff Pastry

The main feature of puff pastry is the flaky structure
and the intense butter and roasting flavors.
How does this work?
Well, imagine two sheets of paper, one is white
and the other is black.
You put one on top of the other and then fold
the papers in half. And then fold them in half
again... and again... and again.
The result is a thick pack of paper with alternating
layers of black and white.
In the bakery, instead of black and white paper
we use dough and butter. We then roll out and
fold the dough and butter several times.
The resulting pastry consists of many alternating
layers of dough and butter.
When baked, these layers separate (because the
liquids turn into steam and expand).
The thin pastry layers turn into crust and develop
this wonderful roast aroma and the brittle texture.
Sounds complicated? :-)
Well, it's really a lot of work when you do it
by hand.
In the bakery, machines do most of the rolling
and folding.
Still, you can do this at home. Nothing trumps
the smell of freshly baked puff pastry in the kitchen. :-)
However, if you want FAST results…
You can skip most of the work and use ready-made
puff pastry from the supermarket.
Of course, it’s not as good as the home-made version.
But it’s FAST… and good enough for simple things
like the Simple Palmiers:

P.S.: In the Simple Palmiers video I coat the
puff pastry sheet with sugar.
But instead of sugar you could just as well
use grated parmesan cheese and herbs to
make a savory version.
No matter if sweet or savory, this simple treat
is really addictive. So, be careful... ;-)
