(once you mastered tempering).
Put a few Mendiants in a cellophane bag
and you have a perfect little gift for
your friends. :-)
And it’s a good way to learn and practice
the new skill.

P.S.: I briefly mentioned the composition of
flavors and textures before.
The mendiants are a good example.
It’s a rather simple “snack”.
But the combination of tempered couverture,
nuts and dried fruits works really well.
There are three completely different textures.
The chocolate melts in the mouth, the dried
fruits are a bit chewy and the nuts are solid
but can be easily bitten into pieces.
The flavors also fuse nicely...
In short:
It’s a pure pleasure to eat mendiants! :-)
We will explore more flavor combinations in
project #3 (coming soon).
