It balances the tangy sharpness of Payoyo goat's milk with the rich creaminess of Manchega sheep's milk, merging them into a buttery, herbal and aromatic blockbuster.
This exceptional cheese began as a quest by two men to rescue the local traditions. To this day it is made by a cooperative of 14 people in the tiny mountain village of Villaluenga del Rosario.
