It is harvest time in Navarra, when piles of fresh green artichokes appear in markets across the region. There they are called the 'flower of the market' for their beautiful shape.
Only one variety is harvested, the Blanca de Navarra. This kind of artichoke is very tender and has no downy 'choke,' so it is perfect for preserving.
Our producers have perfected the art, hand-peeling each little artichoke one-by-one. Firm yet tender, with no chewy leaves, you have never tried artichoke hearts like this before! Serve drizzled with extra virgin olive oil or sauté with slivers of Serrano ham for a delightful warm tapa.
