When I was training in nutrition and to become a raw foods master, I became deeply interested in mushrooms. I had never considered their true wonder before.

All About Shitake

Research has shown that shiitake mushrooms contain several phytochemicals that can protect the DNA from oxidative damage. For thousands of years mushrooms have been used in healing and medicines and they are being increasingly researched today to assess their importance and health benefits. There are edible, inedible, magic and poisonous mushrooms.


Currently there are over 10,000 known types of mushrooms and scientists reckon about 2,000 of these are edible. Although that may seem like a lot, mycologists suspect that this is only a fraction of what’s out there! Today we are going to focus on the benefits of Shitake Mushrooms:

  • Immunity

  • Enhances Cardiovascular health

  • Increase energy and Brain Function

  • Helps prevents obesity 

  • Excellent Source of Vitamin D (more about that next week).

Zesty Shitake Mushroom Pasta


My Zesty Shiitake Mushroom Pasta features shiitake mushrooms in a nest of spaghetti pasta flavored with garlic, parmesan cheese, lemon zest and fresh basil. It’s a great immune booster, helping you stay healthy and energized. 


Ingredients (3-4 servings)

  • 2 Cups shiitake Mushrooms

  • 3 Cloves Garlic

  • Large Handful of Fresh Basil (optional) 

  • Block of Parmesan Cheese

  • 1 Lemon 

  • Spaghetti (You can substitute with chickpea or gluten free pasta)

  • Extra Virgin Olive Oil

  • Salt

Instructions


Boil water and put in pasta with some salt.


While water boils, grate/zest of 1/2 lemon, and grate ½ cup of parmesan.


Heat the pan and add oil and garlic for 30 seconds to 1 minute.


Add chopped shitake mushrooms and cook until softened (5-8 mins depending on mushrooms).


Once mushrooms are softened, add in ½ a lemon zest, squeeze in ½ juice of lemons.


Pasta should be about ready! Drain pasta, saving a cup of water from the pasta.


Add pasta to pan, then add parmesan and stir to combine.


If it’s a little dry add some of the reserved pasta water, 1 tablespoon at a time.


Plate and serve with fresh black pepper and parmesan shavings and fresh Basil!

Sprinkle in a little extra health & wellness – mix in with your spaghetti and parmesan!
