Triple Berry Popsicles

Welcome to Gut Harmony where each #WellnessWednesday we will be sharing some tips around food and recipe ideas to help heal your gut and bring you back into harmony from the inside out.

Last week we looked at root veggies and including color in your daily diet.


This week we are going to look at how colorful and versatile berries are in your diet. Using blackberries, blueberries and raspberries you can include them in breakfast, smoothies and desserts.


In the morning I love to put mixed berries 

  • On yogurt

  • With granola

  • With oatmeal

  • With Overnight chia pudding

  • As a healthy snack and

  • In Smoothies (great recipes coming soon)

Eat a Rainbow: Food Color Charts

Here in our house, we use a color chart for fun and it’s great for kids. We put stickers on the chart when we eat foods of different colors throughout the day. (The chart we use is from Liz Cook Charts.)


Pro Tip: If you have kids, you can always make one of these at home yourself and get small stickers in an office store to use each day! The aim is to have as many stickers as you can every day.

Kid-Approved Triple Berry Popsicles!


You can purchase popsicle molds in most grocery stores or supermarkets!

Ingredients (makes 6 pops)

  • 2 cups of mixed berries (organic where possible)

  • 2 cups of coconut water

  • 1 1/2 tablespoons of honey


Optionally add texture:

  • Add 1 ripe banana to existing recipe 

    OR

  • INSTEAD OF COCONUT WATER, use 1 ½ cups of probiotic for gut health 

Instructions:


  • Place all ingredients into blender

  • Blend until smooth

  • Either spoon the mixture or use a funnel to pour into molds

  • Leave a ¼ inch space at the top of the mold

  • Place in freezer for 4-6 hours

  • And then, the most important part: enjoy!!

Fun Fact: Blueberries help to diversify our gut bacteria. They have also been shown to destroy harmful gut bacteria. The tiny seeds in berries also ensure their fiber content is higher than most other fruits too!!
