• 1 FULL CHICKEN • 2 TBSP. OLIVE OIL • 4 TBSP. LOUISIANA GRILLS SMOKEY SPICY SWEET HOT RUB • LOUISIANA GRILLS MESQUITE PELLETS

Special Tools: • Scissors
Place chicken on cutting board
with "breast side down". With a pair of sharp kitchen scissors carefully snip down each side the spine, and then remove the spine (save to make chicken broth). Then with your scissors make a 1" slice in the breast bone (this will allow it to lay flat). Now turn the chicken over (breast up) and with both hands apply a slight push of pressure to the breasts and this will "flatten out" your chicken into the required spatchcock shape.
Rub the entire chicken with olive oil and apply LG Sweet Heat spice rub generously.
1) Pre-heat grill to 375. 2) Ensure pellet-hopper is full
3) Insert probe into the breast of the chicken. 4) Place chicken onto the grill, breast upwards and program your probe for an internal temp of 170°F. 5) Once at temp remove chicken and allow to rest 5-7 minutes before slicing. I use kitchen scissors to slice and cut the spatchcock into pieces. The meat is really tender and will fall apart.
Alternative Recipe: • For an even juicier cook you can brine your chicken overnight in a brine of pineapple juice with herbs of your choice (I use thyme and rosemary), garlic and 1/4 cup
of the seasoning. Drain and dry off before prepping to cook. • Place the chicken away from the "hot spot" of your grill.
