Wood Fire Smoked Turkey Legs This Weekend?

Wood Fire Smoked Turkey Legs

Serves: 3 - 6
  4 cups ice
•  1 bottle Louisiana Grills® Sweet Rib Rub
•  1/2 gallon cold water
  1 cup salt
  2 gallons room temperature water

Special Tools:
•  Brining bag
•  Large pot
•  Paper towel
•  Spoon
  Temperature probe
•  Tongs

In a large pot, combine the room temperature water, salt and ½ cup of Louisiana Grills® Sweet Rib Rub. Bring the brine to a boil, occasionally stirring to dissolve the salt. Once everything is dissolved, turn off the heat and cool the brine to room temperature.

2)  A
dd the cold water and ice to the brine, then place the turkey legs in the pot. Carefully pour the brine over the turkey legs, cover the pot and place in refrigerator for 24 hours.

3)  A
fter 24 hours, drain the brine and remove the turkey legs from the pot. Pat the turkey legs dry and coat all sides of the turkey legs in ¼ cup of Louisiana Grills Sweet Rib Rub.

4)  F
ire up your grill and set the temperature to 250°F. If using a non-pellet smoker, set it up for low heat.

5)  Insert a temperature probe into one of the turkey legs and place in the on the center rack of the smoker. Smoke for 4-5 hours, or until the turkey legs are deeply browned and fragrant. Internal temperature should be 165°F.

6)  Remove the turkey legs from the smoker and serve immediately.
