Limited Catch is heating up 

For those of you who missed it last week, or just want to get your hands on more, we have another shot of  California Wild King Salmon in the store. Other seasonal offerings from US waters include Golden Tilefish from the Gulf and Soft Shell Crabs from the Mid-Atlantic.

Firefly Squid from Japan — if you're tempted to try this very seasonal delicacy, we still have a small amount. The season ends soon.

If the grill is calling your name, check out our salmon and snapper collars and our ever-popular swordfish chops. With only two chops per giant fish, these go quickly.

Soft Shell Crabs Inspire

Get your frying pan ready

Soft Shell Crabs continue to inspire home cooks and chef customers alike. Check out this dish (above) by Chef Mark Bolton at Rolf & Daughters in Nashville, TN: Soft shells seasoned with ramp salt and dried green Calabrian chili, herbs from the restaurant garden spritzed with fish sauce and lime juice and sitting on top of a crème fraiche and pickled ramp sauce served. 

A quick dusting of flour and a trip to the frying pan is all these really need, but feel free to follow your imagination as you dress them up.

We were able to get another shot of Wild California King Salmon in. Supply on this show-stopping fish is always limited.

These fish are from the icy sub-Antarctic waters off the remote Heard Islands, over 4,000 km from the Australian mainland. The fishery is certified sustainable by the Marine Stewardship Council (MSC).

Anything Goes Grilled Squid

It's the season of the grill, and local squid is one of our favorite things to cook over an open flame. This is a forgiving and flexible dish – you can use any type of vinaigrette that suits your mood – use sesame oil instead of olive oil and rice vinegar instead of cider; add different minced herbs to the mix – the squid does well with just about any flavor profile.
