The ceramic burrs reduce whole peppercorns (or any whole spice) to the exact consistency of your choosing with just a few quick twists of the Hammershøi’s ribbed porcelain knob. Grind coarseness has a surprising influence over the flavor of black pepper in particular—the finer the grind, the more potent and intense the flavor—which means that any great mill must be adjustable. We love that this one can go from ultra-fine to barely cracked (and everything in between) quickly and readily.
