The ceramic burrs reduce whole peppercorns (or any whole spice) to the exact consistency of your choosing with just a few quick twists of the Hammershøi’s ribbed porcelain knob. Grind coarseness has a surprising influence over the flavor of black pepper in particular—the finer the grind, the more potent and intense the flavor—which means that any great mill must be adjustable.
