My New Show Is About Growth and Learning
I came to America’s Test Kitchen 17 years ago because of food. I love cooking, figuring out how recipes work, and, of course, enjoying a great meal. But I stayed because of people—those you know and love like Lan, Bryan, Jack, Julia, and Bridget, but also the rest of the team that makes ATK a special place to work and create. I love learning about people through deep conversation, and that’s exactly what I’m doing in my new ATK original show on Netflix.
I Changed My Mind with Dan Souza is me in conversation with luminaries of the food and entertainment worlds about the moments in life that test us and ultimately shape who we are. It’s about new perspectives, life lessons, regrets, and triumphs. Of course it’s also about food. In each episode I find out an ingredient that my guest dislikes and then serve them three different dishes to try to change their mind about it.

In the
premiere episode, I interview the dazzling Padma Lakshmi, Emmy-nominated producer, television host, best-selling cookbook author, and advocate. Padma and I discuss her early life, the beauty of great food writing, and how food connects us all. Padma hates the taste of bitter melon, so I pull out all the stops (and even a cocktail shaker) to convince her to give it another try.
At ATK, we always dig into the why behind things, and I want to know why my guests are who they are. The more we can understand about other people, their hardships, and their resilience, the more we can grow as people ourselves. We also grow and change as cooks and eaters, and I’m using ATK’s recipes and culinary wisdom to hopefully change some minds—or at least start a vibrant discussion.
