| Chicken Francese
|
| Eggy and elegantly lavished with lemony beurre blanc, Francese has long been one of the great Italian American chicken cutlet recipes. This retro technique, which found fame at the Brown Derby restaurant near Rochester, New York, is still popular with home cooks. Our updated version of the recipe begins with cutting, flattening, and salting each breast for flavor and to help them retain moisture during cooking. For frying, we settled on a combination of olive oil and vegetable oil—saving money without sacrificing
the taste of the olive oil.

| Braised Asparagus |
| Braising renders asparagus neither crisp-tender nor browned nor vibrant green—yet it’s about to become your favorite way to cook the vegetable. Grassy, snappy spears that emerge from grilling, roasting, and sautéing are delicious, but braising coaxes asparagus’s gentler side into the spotlight. Choose thick asparagus spears at the supermarket because they have a more tender texture than thin ones. Cover the asparagus spears halfway with braising liquid and simmer them vigorously for meltingly tender results. We
prefer a “less is more” approach to adding finishing touches, adding just a splash of acidity and a handful of fresh herbs.

| Chocolate Raspberry Trifle |
| With its contrasting layers of silky custard, jewel-toned fruit, airy cream, and tender cake (often sprinkled with booze for additional festive cheer), trifle is a guaranteed showstopper. Making it look good doesn’t take much, because the trifle bowl, a footed glass number with straight sides, does a lot of fancifying work. Once you’ve prepared the components, simply stack them in order and they’ll resemble a cache of gems displayed in a crystal case. Get the recipe for our favorite version, featuring a

| Hot Ukrainian Borscht |
| Within Ukraine’s borders, there may be hundreds of versions of borscht. The country’s national dish ranges from green soups teeming with nettles, spinach, and sorrel to vivid magenta broths dyed by beets, which grow abundantly in Ukrainian soil. Every pot contains acidity because Ukrainian borscht belongs to a larger family of Slavic sour soups, including versions of borscht from Poland and Russia. Our version calls for beets, which give the dish an earthy sweetness, and lemon juice.

| If you love drip coffee, you know how disappointing many automatic drip coffee makers turn out to be—all promise and no delivery, making coffee that’s weak, sour, acrid, or not hot enough. Add complicated controls, drippy carafes, and hard-to-fill water tanks, and they can also be frustrating to use. We searched high and low for a machine that would produce perfectly brewed, piping-hot coffee every time, with minimal fuss. We tested machines ranging in price from less than $20 to nearly $375.

| Tasting Vegan Italian Sausage Links

| As more plant-based offerings flood the market, the vegan sausage scene is no exception. What was once a lonely shelf stocked with tofu hot dogs now includes a variety of links: Italian, chorizo, breakfast sausage, and bratwurst. We set out to find a sausage we liked, focusing on Italian-style linked, which are the most widely available. We tasted four products served plain and cooked in our winning jarred pasta sauce. The result? Juicy, savory, meaty links with just the right amount of seasoning and a nice
