How We Tested:
Our ATK Reviews team bought 10 models priced from $25 to $200 and put them through our usual battery of chef’s knife tests: mincing herbs, chopping vegetables, butchering a whole chicken, and quartering butternut squash. This Zwilling knife was a favorite, permitting the full rocking motion when chopping and slicing. Delicious recipe, I have made it quite a few times and we love it. A bonus here is watching Bryan break down the chicken in the video - an excellent education, it made me better at breaking down a chicken. In addition to technique a really sharp knife is key IMO.

Roasted Artichokes with Lemon Vinaigrette

Artichokes, a mainstay at farmers’ markets, are often steamed. Trust us, roasting is the best approach for accentuating their nutty flavor. A bit of knife work (reach for that new santoku!) before roasting will lead to more concentrated flavor—and eliminate the messy scooping work at the table. Serve artichokes as an app or side with our lemon vinaigrette or garlicky butter sauce. |

Step by Step Photos

1. TRIM TOP AND BOTTOM: Using sharp knife, cut away most of stem, leaving about 3/4 inch attached. Cut off top quarter of leaves. |

2. SNAP OFF OUTER LEAVES: Pull tough outer leaves downward and break off at base. Repeat with leaves in first 3 or 4 rows from base. |

3. TIDY UP STEM: Use paring knife to trim away tough outer layer of stem and base, removing dark green parts.
|

4. SPLIT AND SCOOP: Halve artichoke lengthwise with chef’s knife. Using spoon, scoop out fuzzy choke. |

5. REMOVE LEAVES AROUND CHOKE: Pull ou tiny purple-tinged leaves around choke, leaving small cavity. |
