| A cross between a Dutch oven and a skillet, braisers are one of the most versatile cooking tools you can use to prepare foods. Prized for their ability to brown and tenderize meats using a wet-heat cooking method, braisers can also sear, simmer, roast, steam, and shallow-fry all kinds of foods. From delicate vegetables or hearty produce to thick, tough cuts of meat, a good braiser never ceases to impress with its transformative cooking abilities.
The perfect stovetop to oven pan, it’s no wonder braisers are used for so many one-pot meals. Their unique design, which features a wide surface area and sloped sides, can easily accommodate liquids and larger foods–cutting down on annoying food spillovers. And their tight-fitting lids keep moisture inside the vessel as food cooks. While your trusty Dutch oven can handle many of the same tasks as braisers, you can justify your investment in our very affordable Best Buy pick (now on sale for just $71.95, a fraction of the cost of our favorite which sells for $310) by knowing some food just cooks better in a braiser. And by better, we mean delicious, perfectly browned meats, tenderized vegetables, and more bursting with flavor.

| This pot performed just as well as our favorite braiser but had smaller handles that were tough to grasp. Because of its thicker cooking surface, it took a bit longer to heat up and to brown chicken thighs. This braiser had the largest cooking surface area, which ensured proper liquid reduction and a rich, flavorful ragu. It was easy to clean and withstood being whacked with a spoon and having its lid slammed down repeatedly. This pot delivered excellent results at a bargain price. |

How We Tested Braisers |

| We tested five braisers, priced from about $59 to about $330. Four of the braisers were made from enameled cast iron and one was ceramic. We braised chicken thighs, browned meatballs (and simmered them in tomato sauce), braised vegetables, roasted chicken, and cooked a pork and pasta dish. Similar in appearance with slight eccentricities, clear winners emerged as the braisers worth bragging about. |

Cooking
|
| We preferred the models made from enameled cast iron as they browned the food better (without burning it) and cooked the food more evenly than the ceramic model. A model’s size and shape also played a huge role in the quality of the cooked food. The braisers with wider cooking surfaces could easily accommodate larger foods (i.e. a whole chicken) and evaporate liquids at a faster rate than that of the smaller models. Some models also featured self-basting lids, but we didn’t find this trait to have any
significant impact on the prepared food. We favored the models with wide cooking surfaces and gimmick-free lids.

Ease of Use
|
| Braisers are often used for stovetop-to-oven cooking, so it’s essential that the handles (on the vessel and lid knobs) are easy to grasp. We found the models with wide, large looped handles to be the most comfortable to maneuver. We also evaluated the importance of the braiser’s interior color and wall height, finding that lighter interiors offered better visibility while cooking but that greater care needed to be taken while stirring ingredients due to the low, sloped sides. |

Cleanup
|
| We washed all of the braisers by hand; none of the models posing any significant cleaning challenges.
|

Durability
|
| Our favorite braisers did not chip or crack when we whacked the rims with a metal spoon 50 times or slammed the lids on the pan 25 times. |
