What I Pack for a Summer Picnic

One of my favorite things about summer is how easy it is to turn an ordinary afternoon into something special with a picnic. Now with a toddler running around at home, I prefer foods that can be prepared ahead of time, travel well, and don’t require much last-minute work.

My picnic philosophy is similar, with some additional summery specifics. Use seasonal ingredients, choose foods that taste great at room temperature, and do as much prep in advance as possible. Most of my picnic prep happens the night before, after my son goes to bed.

I love loading up on fruits and vegetables while they’re abundant and affordable and starting every picnic with something refreshing. Sturdy salads like Farro Salad with Peaches and Pickled Jalapeños and Marinated Bean and Asparagus Salad hold up beautifully and often taste even better after sitting overnight. For a heartier option, Cold and Creamy Peanut Noodles with Ham are just as delicious straight from the cooler. I keep the lettuce in a separate zip-top bag lined with paper towels and add it just before serving for maximum crunch.

Handheld foods are always a must. Marinated Steak Spring Rolls are one of those dishes that always impress people when I bring them to a gathering. French Summer Sandwiches with Zucchini and Olive Tapenade are equally at home in a picnic basket. If grilling is part of the plan, Go-To Grilled Chicken Kebabs are one of my favorites, and I like adding Quick Sweet Pickled Rhubarb for a bright, tangy contrast.

No picnic feels complete without something sweet. Khao Niaow Ma Muang (Sticky Rice with Mango) is one of my favorite summer desserts, and it tastes great at room temperature. Hojicha Pistachio Cookies bring warm roasted tea flavors and plenty of nutty crunch to the picnic basket. A pitcher of Strawberry Lemonade ties everything together.

My favorite picnics are the ones that let me enjoy the season and spend more time with the people I love. And my kid getting to run around in the park between dinner and bedtime? That’s a bonus for us both.
