September is a sweet spot for simple weeknight cooking. A little bit summer, a little bit fall, it’s raw produce’s time to shine. Tomatoes, peppers, and basil are coming in strong, and there’s so much zucchini that farmers are practically giving it away. At the same time, the first signs of fall (apples! Leaves turning colors! Your coffee shop’s seasonal menu!) are popping up left, right, and center. This is our team’s recipe wishlist for the month.

No-Mayo Tuna Salad

Instead of the stiff scoopable mixture you’d find at a deli counter, this recipe is inspired by Italian-style tuna, with just-broken-up fish fillets tossed with a bright vinaigrette, herbs, and crunchy celery. Add a can of white beans for heft and serve with peppery greens like arugula or a hardy chicory like radicchio. Store the salad and greens separately and it’ll stay just as punchy and fresh throughout the week.
