Spring is in full bloom and sweet, green ramps are here! Our Wild Ramps are hand-picked and sustainably harvested every year from the rich loamy soil of the Adirondack Mountains. Dried at low temperatures to preserve the lusciously silky-sweet flavor that’s half caramelized onion, half green garlic and entirely special, each jar is a treasure trove of value containing around 37 whole ramp leaves!

One of the challenges with ramps is figuring how to harvest this slow-growing wild plant sustainably. Our partner foragers harvest only the leaves from a small percentage of ramp plants, leaving the bulb and roots intact so they can re-grow new leaves every year. 1,000 pounds of fresh ramp leaves dries down to just 90 pounds of savory Wild Ramp flakes, meaning every flake is concentrated with the bright, fragrant flavors of early spring harvests.

This beloved spring crop has a very short harvest season limited to northeastern states, making it an ephemeral delicacy every year that can be hard to find. Dried Wild Ramps capture that famously savory allium flavor to have on hand even after ramp season ends. It’s great as a garnish or aromatic in everything from scrambled eggs and chicken & rice to soups and salad dressings.

To get the most flavor out of your Wild Ramps, bloom them in some butter first over low heat. Our social media manager Danielle made a grilled cheese and discovered that the ramps “really came alive in the butter. I sprinkled some in the butter in the pan and they added a ton of extra ramp flavor. They baked into the bread. Maximum ramp flavor.”
