Suresh Pillai and Carrie Dashow operate Atina Foods in Catskill, New York. They’re known for transforming local produce into holistic ingredients inspired by Suresh’s upbringing in the south Indian state of Kerala.
Garlic scapes are the long, twirly flowering stems of hardneck garlic, with a texture like string beans and a gentle garlic flavor. They’re often discarded as a secondary crop to the more familiar, storable garlic heads. Atina Foods found that nearly 70% of scapes go to waste, and so they set out to preserve these marginalized vegetables. Once harvested, the garlic scapes are chopped and mixed with salt, fenugreek, mustard seed, asafoetida and chili powder. Each jar is purely salt-fermented with no added vinegar or water, which results in a surprisingly sweet finish.
