BALSAM FIR SALT 🌲

Open a jar of our Balsam Fir Salt and let its intoxicating aroma take you to the sugar maple forests of the Adirondacks in early spring. Patches of snow still dot the forest floor and the ground is squishy underfoot. Balsam fir pine trees are just starting to sprout their new, bright green needles and the sweet scent of fresh pine fills the warm air around you.

The window for harvesting these baby balsam fir tips is short. When the trees put out their first sweet, aromatic needles, foragers only have a few weeks to pick them before the needles darken and turn fibrous.

The same H-2A agricultural experts from Jamaica who forage our wild ramps, tap maple trees for syrup and maintain upstate NY's extensive apple orchards also carefully pick each delicate fir tip by hand.

In order to capture the resinous and herbal aroma of the tender fir tips, we dehydrated and ground them after they were foraged.

Next, we delivered them to David Iannicello at Syracuse Salt Co., where he mixed them with his outstanding Salina Crystal Salt, dehydrated from underground salt springs in upstate New York. The result is a seasonal finishing salt that'll fill your kitchen with a piney holiday aroma.

Sprinkle our Balsam Fir Salt over brownies, scatter it over a medley of root vegetables just pulled from the oven, or use it as a finishing salt for steamed fish or shrimp. This seasoning salt is perfect anywhere you need a little wintertime flavor boost.

ANGRY ORCHARD WASSAIL MULLING SPICE 🍂

We're so excited to introduce our new collaboration with Angry Orchard (yes, the Angry Orchard, the famous hard cider company) and Head Cider Maker Ryan Burke: Wassail Mulling Spice. It's a rich, vanilla– and star anise–scented blend named for the ancient English celebration to mark the end of one harvest and usher in the next. 

Angry Orchard makes mulled cider for their annual Wassail celebration, and we based this blend on that recipe, using ground Nyanza vanilla pods with a mélange of nutmeg, allspice, royal cinnamon, cloves and star anise to make a bold, rich and sweet spice blend perfect for everything from mulled cider to pancakes. 

Prepare to be transported to a cabin in front of a wood stove, warming your hands with a mug of spiced cider after a snowy day of sledding. Or perhaps you live in a place with blue skies and palm trees, and you need a little help get you into the wintry spirit — this is the answer!
