Big Spoon’s co-founder Mark Overbay developed Hatch Hot Honey Peanut Butter for this year’s Central Market Hatch Chili Festival in Texas, and after working with us on Big Spoon’s wildly popular cardamom bun nut butter, he knew our Hatch chilis were what he needed. “Whenever Burlap & Barrel sources an ingredient, I know it's going to represent not only extraordinary flavor but also an extraordinary story. Mark tinkered with hot honey and peanut butter for years before adding Hatch chili. “I needed a third ingredient that would allow both the peanuts and the hot honey to become something greater together,” he says. “Instead of competing, every ingredient began amplifying the others.”

How do you use Hatch Hot Honey Peanut Butter?

Outside of the usual PB & J, Hatch Hot Honey Peanut Butter has a wide range of uses in the kitchen. Pair it where you would use peanut butter AND spice.

• Our friends at Big Spoon love it on freshly baked cornbread, swirled into a deeply rich mole or drizzled over roasted sweet potatoes.

• For maafe, the West African stew, replace the usual peanut butter and hot peppers with this Hatch hot honey butter.

• Mix it with chili crisp or replace regular peanut butter in Thai satay sauce for grilled chicken skewers. Stir it into slippery peanut noodles with fresh cilantro or scallions for a quick lunch.

• Give your peanut butter cookies, cake frosting and rice crispy treats a spicy but subtle lift.

One final note: since Big Spoon does not use any palm oil, hydrogenated oil or stabilizers, the peanut butter will separate from the oil. Give it a good stir before using to get all the good flavor bits distributed evenly and store it in a cool, dark place. Refrigeration isn’t necessary.
