New: Lindera Farms' Spiced Vinegars 🍷

Two limited-edition bottles from Lindera Farms are now in stock: a playfully umami Gazpacho Vinegar and sweetly spiced but tart Red Sangria Drinking Vinegar. Both bottles feature pristine produce and foraged ingredients, plus our single-origin spices to make one-of-a-kind traditional vinegar ferments—all guided by a landmark collaboration between Lindera Farms and chef José Andrés. It’s astounding how much flavor is packed into each drop. The gazpacho vinegar is perfect on fresh summer tomatoes or cucumbers, and the sangria vinegar is delicious with seltzer on ice, or used as a red wine vinegar!

Lindera Farms founder Daniel explains, “We work with small farms here in the mid-Atlantic, and we look for people passionate about growing the best produce in the most sustainable way, while being experimental and adventurous. Nobody captures that same ethos as well as Burlap & Barrel in how they source the incredible spices we got to use in the Gazpacho and Sangria vinegars, and that’s why we were proud to use them.”

The vinegar bases are custom-made with wine, produce and spices. Inspired by the Spanish chilled soup, Gazpacho Vinegar is limited to 300 bottles and has been fermented with “cosmetically challenged” tomatoes, peppers, and cucumber that taste amazing but would otherwise be discarded as food waste; plus our Purple Dulse Flakes and Zanzibar Black Peppercorns.

• We recommend treating Gazpacho Vinegar like you would apple cider or white wine vinegar.

• Beyond salad, use it where you need a savory umami-booster for cooked meat, fish and poultry.

• Need a tart squeeze of lemon or an extra spark? Try it on freshly grilled vegetables, like grilled eggplant. We think pickled onions would get a major upgrade, too.

The Red Sangria Drinking Vinegar is in short supply at only 150 bottles (we hope you see this in time!). Its ferment contains Native American grapes, locally foraged magnolias, juniper and spicebush; as well as our Ground Laurel Bay Leaves, Royal Cinnamon, Ground Black Lime and Zanzibar Black Peppercorns. The resulting blend has the same body and complex spiced flavor of an authentic Sangría without having to cut a bunch of fruit.
