We wanted to make our rare heirloom Vietnamese cinnamon as easy to use in the kitchen as possible. This version is ideal for dropping evenly dispersed flavor into coffee, cocktails, doughs, batters, custards and candies with no ground cinnamon sediment. Our longtime collaborators at Bittercube steep a whole pound of ground Royal Cinnamon for every gallon of rye whiskey and neutral spirit and let the mix infuse for a week to get the most intense cinnamon flavor. Our extract contains no stabilizers, concentrates or preservatives. Only cinnamon and rye whisky, that’s it! The rye enhances the cinnamon spiciness with a harmonious warmth.

How do I use Cinnamon Extract?

You can use Cinnamon Extract anywhere you would use vanilla extract, powder, or paste. It is a one-to-one swap in recipes, so there is no need to convert it. Try it in baking, frozen treats, beverages and as a finishing step for warmly-spiced proteins.

• You don’t always have to leave out vanilla in recipes, in fact it works well as a supporting note in cinnamon whipped cream.

• Cinnamon pairs especially well with fall fruits, milky creams, honey and chocolate. Make this gorgeous chocolate banana bread and bring out more of the flavors with cinnamon extract. You’ll want to add it to gingerbread, molasses bars, pecan pie and mousse!
