High cocoa dark chocolate is extremely popular, so why is that? When sugar is such a daily craving for many of us its hard to imagine that enjoying chocolate with little or no sugar can be so popular! |

Well, for many of us the choice for reduced sugars in your diet is of high importance and for many different reasons. Did you know as we age our palette detects fewer bitter notes, with fewer tastebuds (papillae), so what was once too bitter becomes much less so.
Also, as we mature and adjust our diet to a more healthier level, with reduced fats and sugars, we progressively become more accustomed to bitterness over time. Of course some of us have to be aware of certain food restrictions too, with sugar being one of those and again, limiting what you can eat and so retraining your palate to enjoy more bitter flavours. And some of us simply just prefer bitterness and astringency over high sugar packed foods.

A HEATHIER WAY TO ENJOY CHOCOLATE!
ITS ALL ABOUT THE COCOA BEAN
Many studies have shown that high cocoa dark chocolate has health benefits, of course within moderation. This is due to the higher percentage of cocoa beans contained within that bar versus sugar. There's an impressive level of antioxidants in dark chocolate, more so than in some types of fruit! Flavanols, which are antioxidants are linked to a lower risk of heart disease. In theory, dark chocolate will contain higher flavanol content. Also high cocoa dark chocolate contains minerals like magnesium, iron and zinc. And finally, as it's rich in polyphenols, it may also promote good bacteria in the gut.

OK, SO HOW BITTER CAN I GO?
We have many dark chocolate bars with 100% cocoa content. Yes, zero sugar! They are certainly not for the faint hearted and if you don't already know you have a distinct love for bitterness you probably wouldn't enjoy them. They are however, extremely popular for the reasons above. If you want to enjoy the benefits of high cocoa dark chocolate but aren't sure where to start, we would suggest starting at 70% which we feel is the turning point at which chocolate begins to taste slightly bitter for most people. And 85% is the point we rate them as high cocoa on the website with a pronounced bitter flavour profile.
If you already enjoy a high cocoa dark chocolate from the supermarket, such as Green & Black, you will most likely find you can go even higher with one of the chocolate makers within our collection before experiencing a bitter flavour profile. This is due to the quality of cocoa bean and manufacturing processes. Many high cocoa dark chocolate bars using single origin or indeed single estate cocoa can be surprisingly fruity!
