We love a briney cucumber in a jar, but South Asian pickles or achaar are what I grew up eating so I do have a very biased soft spot for them. Unlike American pickles, which are typically made with dill or cucumbers, Indian pickles can be made with just about anything (raw mango, lemons, chillies, carrots, dried shrimp, meats!). The hero ingredient is sliced and diced, then soaked in oil, salt, and spices, and left out in the sun to ferment slowly until it absorbs all that rich flavor and turns soft and tender. You just need a spoonful to make the most boring meal punchy and exciting.
Lemon pickle is among the most commonly found pickles in India, so when Saba told us she could work with some beautiful Meyer lemons for this, I was beyond thrilled! Nik's Achari Masala and lemon pickle recipe just worked perfectly for this, and suddenly we were in business!
I LOVE this Meyer Lemon Achaar with a simple bowl of yogurt and steamed rice, but it’s just as good with brothy beans, soupy lentils, or mixed into a salad dressing! I can almost guarantee you’re going to get through the jar sooner than you think 🍋💕
