At its core, Gunpowder is a fun flavor addition to the simplest of meals. In South Indian households, it’s the thing you eat with dosas or idlis or add to plain rice with ghee to make it more fun. It adds a punch, a nuttiness, an oomph (!!) exactly when you need it most. And since we just restocked it, I bring to you 4 brand new recipes by Padma Lakshmi herself for y’all to try!
I would never have thought to add Gunpowder to pasta but it works so damn well. These Gunpowder Miso Noodles are all buttery, umami, nutty goodness. The aromatics and basil add a freshness and fragrance you don’t expect, and the dusting of Gunpowder at the end means you get the chunkier lentil bits as you slurp up the glossy noodles. For a quick and easy appetizer, try the Roasted Gunpowder Potatoes, which are crunchy, with Gunpowder tucked into all the crispy edges, and with a lacy cheese skirt underneath!
Speaking of fun apps, the Gunpowder Chicken Wings do take a little more time and involve hot oil and frying but the result is SO worth it! The Gunpowder goes into the dredge and is dusted onto the hot fried chicken so every bite is perfect. The trick is really to set up your kitchen station like an assembly line: flour, egg, seasoned panko breadcrumbs, and voila! Lastly, the Gunpowder Cottage Cheese Toast makes for the perfect summer brunch or protein-packed snack.The gunpowder gets sprinkled generously atop the toast at the end but is also mixed into softened butter and slathered onto the toast first (so make some extra Gunpowder butter to enjoy for the week!).
