This exceptional Castillo-variety microlot underwent a 48-hour dry anaerobic fermentation infused with passionfruit pulp to amplify its natural vibrancy and fruit-forward character. Following fermentation, the coffee was gently washed and then dried on raised beds at temperatures below 35°C. This slow, even process preserves the beans' delicate structure and complex flavor profile. The result is a lively coffee with refined sweetness, showcasing Jairo’s meticulous craftsmanship.
Jairo Arcila is a third-generation coffee grower from Quindío, Colombia. He began his career as a mill manager at one of Colombia’s largest exporters, a position he held for 40 years before retiring in 2019. Today, guided by his sons — both specialty coffee experts — he has refined his craft, perfecting selective picking, rigorous sorting, and innovative processing methods. On his sun-drenched farms, Jairo cultivates varieties like Pink Bourbon, Java, Papayo, and Gesha, each delivering distinct, vibrant flavors. Beyond coffee, his land also produces mandarins, oranges, plantains, and bananas, enriching the biodiversity of his fields. Married to Luz Helena Salazar (featured in a previous Rising Tide offering), Jairo’s life reflects decades of expertise and a deep commitment to quality, innovation, and sustainable farming.

Finca Hakuna Matata, owned and operated by former surgeon Henry Gaibor and his wife Verena Blasser (who is a former nurse), is located in La Perla, Nanegal, within Ecuador's Pichincha region. This husband-and-wife team left medical careers behind to cultivate high-quality coffee, running this farm alongside their nearby Finca Maputo, which specializes in honey and washed, high-altitude coffee.
Their standout lot features Typica Mejorado, one of Ecuador's most celebrated cultivars. This high-performing hybrid, believed to be related to Ethiopian landrace and improved Typica selections, is prized for its pronounced florality, elevated sweetness, and layered fruit expression. Of all the Typica Mejorados we have tasted over the years, this lot ranks among the best — complex, beautifully clear, and consistently high-scoring.
The cup reveals hints of mixed fruit, raspberry, and melon, with a texture that is mouth-coating yet light, finishing with a bright touch of lemon.
