I always say, if there is one winery in Australia to try, even if you usually stick to Old World wines, it has to be Dan Standish. His wines are truly fantastic and in their own league.

I really can't recommend these wines enough, they are magical expressions of Shiraz.

Founded by Dan Standish, a sixth-generation Barossan who honed his craft at the legendary Torbreck winery before embarking on a global quest through the Rhone Valley, Napa and beyond, Standish Wine Co has quickly become one of the Barossa's most compelling modern stories. Drawing on ancient vineyards and a deep-rooted connection to the region, Dan returned with a refined winemaking philosophy built on restraint, site expression and absolute focus, crafting tiny volumes of Shiraz that speak of soil, elevation and season rather than excess or spectacle.

The winemaking approach is consistent across the range: grapes are hand-harvested and wild-fermented in open-top fermenters, followed by 18 to 22 months in French oak from four rotating coopers, a deliberate choice to let the vineyard speak over the barrel. The resulting wines are pure, layered and quietly powerful, moving decisively beyond the traditional Barossa style toward something more precise and considered. Aromatic, textured and beautifully poised, they evolve with real depth in the glass and confirm Standish as a benchmark for modern Barossa Shiraz.

Each wine has its own personality:
  • The Standish - VERY aromatic, jumps straight out the glass at you. Greenock vineyard. Opulent and concentration. Savoury, full-bodied, spicy, full-bodied and powerful but incredibly balanced.
  • Schubert - Dark and brooding, the most intense in the range. Roennfeldt Road vineyard. Packed with black cherry, blackberry, mocha and dark chocolate. Concentrated, structured and tannic, yet polished and refined. Powerful, serious Shiraz with depth and sophistication.
  • The Relic - The most charming and expressive. Krondorf vineyard with a touch of Viognier. Lifted florals, lavender and spice over rich fruit. Reminiscent of Cote Rotie in style. Silky, balanced and harmonious with fine tannins and a long, elegant finish.

The 2022 The Standish Shiraz is again providing me with the opportunity to assess bottles two days apart, and how different they are. The freshly opened bottle, as we would all experience upon our first opening, is tight and fresh, with cracked fennel seed, black peppercorns, cumin and ras el'hanout, then dried blueberries and licorice, hints of arnica and raspberry. It's cool and mineral, with a graphite finish. I cannot overstate how much better the wine tastes after two days. All of the edges smooth out, and it is composed and complete ... what a wine. Balance and harmony in a single swoop. It's savory, though. Super. 14.9% alcohol, sealed under natural cork and foil.

The 2021 The Standish Shiraz was made with fruit from the Laycock family vineyard, Greenock, with 30% whole bunches in the ferment. The Standish Shiraz was the first cuvée launched by Dan Standish in 1999, and the wine is routinely typified by its muscular tannin shape and earthy, savory fruit. The most attractive part of this wine is the splay of exotic market spice (namely sumac, black pepper, star anise and fresh cardamom) that sails in on the coattails of the red/purple fruit. It has all the exoticism and romance of a hike through the mountains of Morocco, yet it, perhaps more than any other wine in the collection, speaks of the Barossa in a clear enunciated voice. So, where does it fit in 2021? The 2021 The Standish Shiraz is finer, prettier and lighter than I have ever seen it at this stage of its life. It has all the spice and Barossan identity that is expected; however, it misses the dense baritone of fruit that is present in earlier iterations. Whether you think that is a positive or not is up to you—I am fond of this wine throughout all its incarnations. Vintage variation is responsible for the spark of curiosity and joy that I experience every year during this release, and the real triumph in 2021 is the ability of the vineyard (this vineyard) to shine through the season that shaped it. 14.9% alcohol.

I'm excited to taste this, as it was my favorite cuvée last year. It usually changes year to year, given the seasons, and I like that. It's usually the only cuvée to enjoy the benefits of an alternate vessel—a concrete egg—and this year, the 2022 The Schubert Theorem Shiraz joins the Relic and the Standish as well. The impact of the egg in this wine is one of refinement, or so I see it; it retains a purity of fruit at the core, which speaks to the chalky tannins that spool through the finish. They're chewy and seductive and really great. It's a beautiful release—not shimmering like the 2021, but textural and fine and elongated in its way. It's a beguiling wine, a thinking wine. And, as with the other wines tasted alongside, the bottle that has been open for two days is infinitely more complete; however, it must be noted that this review is built on the freshly opened bottle. 14.9% alcohol, sealed under natural cork and wax.

The 2022 The Relic Shiraz-Viognier contains 2% Viognier skins, and this addition presents in this vintage as a core of raspberry and pomegranate. It is pure fruited and powerfully aromatic, as this cuvee always is. Interestingly, I am tasting this wine from two different glasses: one opened two days ago, one opened this morning. They are quite different, telling us once again that oxygen really is a friend to this producer, especially if choosing to drink these wines young. While the bottle opened two days ago is complete, balanced and utterly refined, it speaks more of its florals and fruit than it does its savory register of spice and complexity. However, the wine opened today has nuances of bacon fat and exotic spice. It is tightly coiled and springy and nowhere near as giving as the former. So, choose your own path. This vintage is a prettier, finer but no less long or coiled version of itself, and it will prove to be one of the greats in the cellar. The tannins certainly are a highlight for me. Built for age but also, in the framework of this beautiful season, absolutely available to you right now. An effortless beauty, here. 14.9% alcohol, sealed under natural cork.

The 2021 The Relic Shiraz-Viognier is made with fruit from the Hongell family vineyard, Krondorf. It was made with 1% Viognier co-fermented, with 25% whole bunches in the ferment this year, up from 15% to 20% in 2020. The Relic is one of Australia’s greatest Shiraz Viognier wines, and it’s a sure thing each year for quality and execution of style. In 2020, it was my preferred wine of the collection for its savory, meaty/bacon fat/bloody character. All elements were in balance, and it managed a savory and floral drive within the same glass. Super cool. This year, I love the wine for all the opposite reasons. The 2021 is creamy, plush and almost sybaritic in its outlay of fruit and tannin. At 15.5% alcohol, it's the highest alcohol wine in the 2021 release, yet it doesn’t show that via warmth or harshness in the wine. The whole-bunch component is up slightly this year from last, and honestly, it feels completely invisible in the wine. This is undoubtedly the biggest, most plush wine in the collection, but true to form for Standish, it is balanced and fresh, with a long future in front of it.
