Each year, in a two-week window between the last of spring and the start of the monsoon, our team tastes through more than 1,000 teas. Three or four gardens make the cut.
We are looking for the teas where season, soil and craft have come together just right, where you can taste the difference in the first sip - bold, malt, raisin. This is our Assam Breakfast.
