In the northeast of India, where the Brahmaputra runs wide through forest that hasn't been cleared in centuries, there is a region that named itself with unusual honesty. Assam means 'one without equal.'

Each year, in a two-week window between the last of spring and the start of the monsoon, our team tastes through more than 1,000 teas. Three or four gardens make the cut.

We are looking for the teas where season, soil and craft have come together just right, where you can taste the difference in the first sip - bold, malt, raisin. This is our Assam Breakfast.

Only half of some estates are planted with tea, leaving forests intact for elephants, deer, wild boar and an extraordinary array of birds - from hornbills to paradise flycatchers - whose noisy presence even provides natural pest control.

Today, farmers draw on indigenous knowledge, replacing chemicals with home-made, plant-based fertilisers and creating elephant corridors so wildlife can pass freely through the gardens.

On our last visit, a baby elephant’s squeaky trumpet became the evening’s favourite story, shared over a football game as children and adults gathered in the cooling dusk.
