The moment the farmers market starts overflowing with peaches, berries, and cherries, my baking priorities shift completely. Layer cakes can wait. All I want right now are desserts that let summer fruit do most of the work.
Few desserts capture the season quite like an Easy Peach Cobbler. As the peaches bake, they soften into a jammy, golden filling beneath a biscuit topping that’s finished with a generous shower of sparkling sugar.
Of course, "cobbler" means different things depending on where you grew up. For some, it's fruit tucked beneath biscuits; for others, it's a softer, cake-like topping that bakes into a crackly, caramelized crust. Our Fresh Fruit Cobbler embraces that latter tradition. While peaches are always a good choice, any berry or stone fruit that's looking especially good at the market can find a home here.
Does that still feel like too much work? Try this Summer Fruit Crisp instead, which comes together with little more than fruit, a handful of pantry staples, and a buttery oat topping. And if you want something more portable for a picnic or beach day, these Berry Easy Jam Bars are the solution.
