Hi all,

Mushrooms are fascinating: Not technically a plant, not a vegetable, meaty but not meat, and available in so many varieties. They’re a fungi (see what I did there?) to have around, but they often live a shadowy existence in our kitchens.

But we want to change that! That's why I've put together some of my best tips on how to use king oyster and oyster, portobello, and shiitake mushrooms as meat substitutes, and I've also brought along a vegan recipe for one of my favorite Thai dishes: pad kra pao.
