Founded in 1829 in Aÿ, Maison Bollinger stands as one of the most illustrious names in Champagne. It cultivates an inimitable style, driven by the art of reserve wines: year after year, a selection enriches a collection of nearly one million magnums, resting patiently in the cellars of the House. Integrated into the final blends, this reserve offers an aromatic palette of incomparable richness. The result is Champagnes of remarkable complexity, which elevate their king grape variety: pinot noir.
It is in this constant quest for expression of the pinot noir that the cuvée PN AYC 21 takes shape. Each new edition highlights a specific cru and base year, delivering an ever-renewed interpretation of its terroirs. With PN AYC 21, it is Aÿ, a historic Grand Cru and the very birthplace of the House, that takes centre stage, accompanied by two Premiers Crus from the Montagne de Reims: Tauxières and Mutigny.
The blend brings together five vintages exclusively from Grands and Premiers Crus. The 2021 base year, marked by beautiful maturity and vibrant acidity, harmoniously balances with the reserve wines (from the 2019, 2014, 2013 and 2012 harvests) which represent 49% of the cuvée. Vinified 50% in oak barrels and aged three and a half years in the cellar, this new expression marries the tension of the 2021 vintage with the aromatic depth of the House's reserves.
The colour, a luminous golden yellow, heralds a nose rich in ripe yellow fruits: quince, mirabelle plum, toasted bread, almond and hazelnut, heightened by notes of brioche, white flowers and acacia honey. On the palate, the fruity character unfolds brilliantly, driven by Granny Smith apple, vineyard peach and blood orange. The texture, supple and silky, leads to a saline finish that seals the complexity of this edition.
