Founded in 1987, Maison Pascal Jolivet has established itself as one of the most distinctive voices of the Loire vineyards. For four generations, the family has cultivated a conviction that has become its signature: letting the terroir speak without artifice. Indigenous yeasts, slow fermentations, interventions reduced to the strictly necessary… each decision honours the founding triptych that Pascal Jolivet has elevated to a signature: purity, precision, elegance.
This ambition has been realised through a determined conversion to organic farming. The single-parcel cuvées from Sancerre have benefited from organic certification since the 2022 vintage, followed by the single-parcel wines from Pouilly-Fumé and the Édition series, certified from 2025. Led by winemaker Valentina Buoso and Clément Jolivet, production director, this advancement consecrates a profound conviction: allowing each parcel to faithfully express its identity.
It is precisely this demand for transparency that the four single-parcel cuvées of the selection translate. The Sancerre Blanc is born from the blending of limestone, clay-limestone and flint parcels, whose complementarity reveals a beautiful balance between fruity character and minerality. Les Caillottes, born on the Kimmeridgian soils of Bué and aged eight months on lees, offer a crystalline elegance with lively citrus notes.
The Pouilly-Fumé Terres Blanches, from the clay-limestone soils of Boisgibault, combines aromatic depth with a chiselled finish. Finally, Sauvage, drawn from the old vines of Champtin and Crézancy, unfolds a texture and salinity that make it one of the most intense expressions of Loire sauvignon.
Two cuvées extend the selection towards more confidential territories. The Édition from the Coteaux du Giennois reveals the potential of a still little-known terroir with modernity and purity. The Pouilly-Fumé Indigène, from the flint slopes of Tracy-sur-Loire, offers beautiful amplitude and a long, saline finish.
