Pudding for Breakfast? [recipe]

I still can't believe Sherri won $25,000 for a lobster sandwich recipe! This week I'd like to share a breakfast recipe with you. We don't talk about breakfast too much in the Miracle Noodle community. That's because most people use the noodles for a high-carb replacement for lunch or dinner. But breakfast is important. It sets the tone for the rest of your day. Your breakfast should power you for several hours. It should give you rock-steady energy without any cravings. A good breakfast will give you enough energy so that when it's time to eat lunch, it seems like the morning has flown by! So before I share the Miracle Breakfast recipe, let's talk about breakfast....European/Mediterranean Breakfast The typical European/Mediterranean breakfast is convenient if you're in a hurry most mornings: gulp down a cup of coffee and have a pastry like a croissant. The Mediterranean lifestyle is generally regarded as healthier than the Standard American Diet (which has an appropriate acronym: SAD). So does that mean you can eat a chocolate croissant for breakfast? Not if you want to optimize your blood sugar levels and keep your waistline trim. The problem with the European continental breakfast is that it's very high in fast-burning carbs. The reason why many people in Europe need to take a long nap after lunch: their fuel (calories) has long run out since the morning pastry. And lunch usually consists of lots of carbs like pasta. The silver lining to this type of breakfast is that it's low in calories compared to the SAD diet. But Europeans tend to be more active during the day and don't sit in their chairs and cars as much as we do. The SAD Diet Lots of Americans also eat pastries for breakfast. There's also cereal, bagels, toast, muffins and other carbs that get stored as fat after being metabolized far too quickly for optimal energy. When many of us Yanks do have time to eat breakfast, we tend to overindulge, eating pancakes, eggs and bacon. This typical SAD breakfast simply contains too many calories and not enough high-nutrient density foods or antioxidants. The No Breakfast Breakfast One thing I like to do on occasion is eat a low calorie but nutrient dense breakfast. Lowering calories for the start of the day a few times per week as long as you have a lot of nutrients and fiber activates longevity genes and does wonders for your metabolism. A healthy no breakfast breakfast includes drinking a couple glasses of high-quality water (this is what I do first thing every morning). Instead of preparing a meal, you can quickly put some healthy ingredients in a blender: green veggies like spinach; perhaps a scoop of protein powder (I use Orgain); a handful of berries or half a green apple; some Miracle Rice to improve consistency, and our super nutrient dense Health Mix In, which includes healthy dietary fats, like chia seeds and flax seeds. . Pudding for Breakfast! Doesn't that just sound so fun ... pudding for breakfast?! I'm not talking about Jell-O pudding, or some other ridiculously high-sugar pudding cup. I'm talking about Miracle Rice Pudding for breakfast! Many people in the Miracle Noodle community, especially those new to the Miracle Noodle way of eating, don't realize that our Miracle Rice is so versatile, it's used by many people in dessert recipes. I don't know about you, but I love having dessert for breakfast. So check out this Miracle Rice Pudding recipe. It was sent to us from a customer who is on a ketogenic diet, so it's a high fat but super low-carb recipe. If you are on that type of diet, you can have it any time of day you want. Speaking of quick, healthy meals, just got an email from a customer, Lynne Wellington, who shared these suggestions for preparing the noodles: After boiling the noodles, dry season them in the pan (e.g. salt, pepper, onion and garlic powder, cajun, lemon pepper, etc), and then dry roast. The flavor really sticks to the noodles. Refrigerate leftovers in a microwavable pot. When you're busy, take out the refrigerated noodles, pour in chicken broth, a handful of bagged broccoli slaw, and maybe some grilled chicken strips, and pop it directly into the microwave for few minutes. Voila! A great flavorful meal in practically no time at all.
