The method

Rinse. Dry-fry. Sauce.

Three moves, one pan. That is the whole thing.

Rinse

Open the pouch and rinse the fettuccine well under cold water. Thirty seconds.

Dry-fry

Dry it in a hot pan until it squeaks. This is the step most people skip, and it is the one that changes the texture.

Sauce

Whatever sauce you already have. Toss it through off the heat, never over it.

Never microwave it plain, and never freeze it. Both ruin the texture.

 

Tonight’s sauce

Peanut, lime and chili crisp.

A four-ingredient sauce, one pan, fifteen minutes. Scallion and crushed peanuts on top, and the noodles do the rest.

Serves two  ·  Fifteen minutes

What you need

2 pouches

Ready To Eat Fettuccine

3 tbsp

Smooth peanut butter, unsweetened

1 tbsp

Tamari

1

Lime, juiced

2 tbsp

Hot water

2 tbsp

Chili crisp

To finish

Scallion and crushed peanuts

 

What you do

Rinse the fettuccine, then dry-fry it until it squeaks.

Whisk the peanut butter, tamari, lime juice and hot water until it pours. Add water a teaspoon at a time if it stays thick.

Off the heat, toss the sauce through. Chili crisp, scallion and crushed peanuts on top.
