Why I started this company, and what I am still trying to do.

Hi there,
Twenty years ago I was in Japan, and friends took me to a small vegetarian restaurant outside Kyoto.
They served me a bowl of noodles I did not recognize — glassy, springy, faintly see-through. I asked what they were. The answer was konjac: a root that has been eaten in Japan for centuries. Not a grain, not wheat. A root.
I was practicing dermatology then, and I spent most of my week with people who had been handed a list of things they could no longer eat. Pasta was almost always on it. I sat in that restaurant thinking about them.
I came home and started Miracle Noodle.
The reason konjac works the way it does is that the noodle is made almost entirely of soluble fiber, which behaves like a gel rather than a starch. That is also why it has no flavor of its own — there is nothing in it competing with your sauce. It takes on whatever you give it.
Twenty years on, the thing I am proudest of is not the noodle. It is the letters. People write to tell me they sat down to dinner with their family and ate the same meal as everyone else. That is the whole point. Food should not be the thing that removes you from the table.
What I want for you is not really about noodles at all. I want you to become your own authority in your health — to stop outsourcing it, and start participating in it. A bowl of noodles is a small place to start. It is still a start.
