Maple syrup isn’t just for pancakes. In fact, you might be surprised by how important it has been over the years.

Indigenous folks were the first ones to realize that this sweet treat was hidden inside maple trees and they developed the first methods of gathering and boiling the sap. Years later, anti-slavery abolitionists relied on maple syrup so they could boycott the sugar that was grown on plantations. Much later, during World War II, when sugar was rationed and sweet food was in short supply, maple syrup let folks enjoy a nice treat. Canada didn’t ration maple syrup during the war, and even produced a cookbook to help housewives incorporate it into their cooking!

So maple syrup has a long story, but it’s not done making history yet: just two years ago the Québec Maple Syrup Producers (who produce most of the world’s supply) declared a record harvest of 239 MILLION pounds of the sweet stuff!
