👋 Hey there,
I hope the first week of September has treated you well! I'm looking forward to the incoming cozy coffee season, but if you're in denial and are still holding on to summer, that's perfectly rational too, especially when considering the outdoor temperatures are still leaning towards shorts weather as opposed to sweater weather.
This week's updates are leaning towards the fall season. With a delicious latte recipe, a sneak peek at an upcoming seasonal release, and a reminder of the new USDA organic certification for Bedford (a coffee that looks and tastes like fall in a cup) - we have plenty to cover.

☕️ 🌱 ICYMI: Bedford - Organic
In case you missed it: we're delighted to officially introduce our Certified Organic Coffee series. This collection reflects the hard work of our producing partners and our shared commitment to sourcing high-quality, responsibly grown coffees.
These coffees work harmoniously within our relationship-based sourcing framework and are produced, sourced, and roasted with an intentional commitment to responsible farming practices. Every coffee in this collection is USDA-certified organic.
The first coffee in this collection is Bedford, the flagship espresso from our original Williamsburg, Brooklyn shop and roastery. Bedford is now a USDA-certified organic blend comprised of coffees from two of our oldest sourcing relationships in Colombia and Ethiopia. Together, they create an incredibly delicious and complex experience. Look for a flavor profile of ripe stone fruits, citrus brightness, and a beautifully syrupy body. Crafted with versatility in mind, this coffee is compatible with any brewing method.

🤝 💙 Partner Story: Bedford - Organic
Named for our original Brooklyn cafe and roastery, Bedford was conceived as a modern espresso offering. With coffees from our oldest relationships in Ethiopia and Colombia, Bedford emphasizes delicious fruit flavors that still balance delightfully in milk drinks.
Suke Quto
After beginning his career in agroforestry, Tesfaye Bekele founded Suke Quto in the aftermath of a series of brushfires in Ethiopia's Guji region. Seeing that locals were replanting the land with monoculture crops like corn and wheat, he suggested coffee as a more sustainable alternative - a native species capable of thriving in semi-forested conditions. Seeing that farmers needed encouragement to take the risk on such a time-intensive crop, he founded Suke Quto Farm, eventually followed by two processing stations. Today he is credited as one of the preeminent figures in coffee production in what is still considered to be an emerging region.
Pillimue Family
Through our partnership with Pergamino, the community of Inzá, Cauca, has long been one of our favorite sourcing regions in Colombia. Organic production methods are fairly common practice here, though certifications are sometimes challenging. The Pillimue family, who are prominent members of their community of San Antonio, led a program to certify 80 other producers in Inzá, teaching valuable techniques in waste reduction and organic fertilization methods.

🍁 🥤 Fall Recipe: Almond Maple Latte
We're keeping cozy with our favorite seasonal coffee recipes. As we transition into the fall season, we're first featuring the Almond Maple Latte, a treat that is wonderful in both hot and iced preparations. Featuring sweet maple syrup and the nutty flavor of almond, this drink strikes the perfect balance between refreshing and comforting.
Almond Maple Latte
Ingredients

Syrup Ingredients
300g maple syrup 20g almond extract 100g white sugar -
450g hot water

Directions

Syrup Directions
Combine all syrup ingredients in a heatproof container Stir thoroughly until sugar has completely dissolved Let mixture cool completely Transfer to a sealed container and refrigerate until ready to use

Iced Preparation
Thoroughly mix espresso and Almond Maple Syrup until combined Set espresso mixture aside Fill serving glass with ice Add milk Top with espresso mixture Gently stir to combine Garnish with crushed almonds -

🎶 🌈 What We're Listening To: Ascend
Ascend is an album coming up on its 1-year anniversary, and since its release I've listened to it dozens of times. I first discovered the artist, Mont Duamel, through their single “Young” a few years ago, which I highly encourage a listen of.
Ascend is perfect for someone looking to listen to something chill and atmospheric, with a touch of experimental mixed in. Definitely the perfect fall album to enjoy on a long walk or a slow morning with coffee.
