August has just about come to a close, and while it's a sad farewell to the summer days, I'm looking forward to the cozy fall coffee season ahead.
To prepare for the comforting atmosphere, we have a delightful new limited release coffee from Brazil paired with an intriguing Partner Story, an exciting update on our new USDA-organic certification, and a Kalita Wave brew guide for all the pour over lovers out there.

🧡 🌱 Now Available: Bedford - Organic
We're delighted to officially introduce our Certified Organic Coffee series. This collection reflects the hard work of our producing partners and our shared commitment to sourcing high-quality, responsibly grown coffees.
These coffees work harmoniously within our relationship-based sourcing framework and are produced, sourced, and roasted with an intentional commitment to responsible farming practices. Every coffee in this collection is USDA-certified organic.
The first coffee in this collection is Bedford, the flagship espresso from our original Williamsburg, Brooklyn shop and roastery. Bedford is now a USDA-certified organic blend comprised of coffees from two of our oldest sourcing relationships in Colombia and Ethiopia. Together, they create an incredibly delicious and complex experience. Look for a flavor profile of ripe stone fruits, citrus brightness, and a beautifully syrupy body. Crafted with versatility in mind, this coffee is compatible with any brewing method.

🇧🇷 ✨ Now Roasting: Brazil - Mundo Novo
Our friends at Los Volcanes return to our menu with another lovely Brazilian coffee produced in collaboration with Fazenda Rio Brilhante. This lot is a single-variety selection of Mundo Novo, offering a beautiful representation of a more classic Brazilian flavor profile.
This is an excellent choice for both filter coffee and espresso, enjoyed with milk or without. Expect a full-bodied coffee with comforting notes of milk chocolate, hazelnut, almond, caramel, pear, and raspberry.

🤝 💙 Partner Story: Mundo Novo

Inácio Urban moved to Minas Gerais in the 1980s to pursue the incredible opportunity he saw in the subregion of Cerrado Mineiro. He acquired land gradually, starting with just 20 hectares of coffee, and today Fazenda Rio Brilhante is an astonishing 2,700 hectares: about 60% coffee, 20% native forest preserve, and the other 20% cotton, beans, and corn.
Minas Gerais is known to be a powerhouse of coffee production - responsible for around 15% of the world's coffee - but in the 1980s it was a newly emerging origin, ascending as production declined in the more southern state of Paraná (which is now too regularly prone to hard frosts). Cerrado Mineiro's coffee farms exemplify modern Brazilian production - massive tracts of land, smooth terrain, and a long, warm, and dry harvest season ideal for the production of natural and pulped natural coffees...

📝 ☕️ Brew Guide: Kenya - Rianjagi
From our current single origin menu, Kenya - Rianjagi carries all the signatures of an excellent Kenyan coffee. Notes of blackberry, clementine, pomegranate, and golden raisin meet subtle tones of molasses and ginger in a high clarity, dynamic cup. To help this coffee shine when you're brewing at home, our Green Coffee Buyer shares his current favorite brew method and recipe details:
"This coffee will be enjoyable in a number of different filter preparations, auto-drip or manual, and I also encourage experimentation with flash brewed, iced coffee for as long as the weather still supports it! I've enjoyed brewing Kenya - Rianjagi in a flat bottom dripper, like the Kalita Wave, with the parameters detailed below."

🎶 🌞 What We're Listening To: Confessions II
Okay, let me preface this by saying that I know I’m late to the party here. June was busy. July was somehow even busier. But I finally had the chance to listen to Madonna's new album, Confessions II, and goodness, have I been missing out.
I’ll set the stage briefly by saying that I put it on one sunny, Saturday afternoon while strolling along the East River in Brooklyn Bridge Park, and it was everything I needed in the moment.
If you're looking to catch some end-of-summer vibes, do yourself a favor, reserve the hour, and listen to this album start-to-finish. No breaks or stops. I hope you enjoy!
