Long before Veneto meant polished, industrial fizz, the region had an older sparkling tradition: wines refermented in the bottle and left on their lees, or fondo, for gentler bubbles, more texture, and a little more wildness.
Costadilà helped bring that style back. Founded by Ernesto Cattel and now run by his son Arno, the estate works Glera and native Veneto grapes, farms organically on biodynamic principles, and lets the wines ferment on their own before finishing their bubbles in bottle.
slm is Italian for sul livello del mare, meters above sea level. Costadilà names each wine for how high up its grapes grow, so 330 and 450 are elevations, not vintages. Móz is the exception, the one bottle in the box from a different corner of the region entirely. We put three of them together in one summer-ready box, ice pack included.
