You don't need complex recipes to nourish your body between one Fasting Mimicking Program cycle and the next: choose seasonal, simple, low-impact dishes that follow the principles of the Longevity Diet.

Fresh, light and balanced, this salad is perfect when you want something nutritious but easy to put together. A simple dish that combines plant-based ingredients and genuine flavours, ideal for warmer days or a quick but complete meal.

Lentil, courgette and mint salad

Ingredients for 2 servings

160 g cooked lentils
2 medium courgettes
Juice of half a lemon
2 tablespoons extra virgin olive oil
Fresh mint, to taste
Sea salt and black pepper, to taste

Instructions

1. Cook the courgettes

Wash the courgettes and slice them into thin rounds or small cubes. Cook in a pan with a drizzle of oil for 5–6 minutes, keeping them slightly crisp, then leave to cool.

2. Prepare the lentils

If using pre-cooked lentils, rinse under running water and drain well.
If you prefer dried lentils, cook them in lightly salted water until tender but firm, then leave to cool.

3. Assemble the salad

In a bowl, combine the lentils and courgettes.
Dress with extra virgin olive oil, lemon juice, salt and pepper; add the mint leaves torn by hand and toss gently.
Leave to rest for a few minutes before serving, to let the flavours meld.
Serve at room temperature or, if you prefer, slightly chilled.
