Santa Maria grilling is Argentine-style open fire cooking over live charcoal, with a hand crank to raise and lower the grate instead of vents or dials. Just fire and instinct. This still isn't cheap for a grill, but Santa Maria setups can run as high as $33,000 (seriously!), so this isn't a bad way to get into one of the most rewarding styles of cooking you can do over fire.
