"Could I just edit it myself?"
Probably. But the better question is will you? Most vacation videos stay unfinished not because people don't care about the trip, but because editing takes time, patience, and energy that get harder to find once real life starts moving again.
"I don't know what kind of video I want."
You don't need to. A sentence about the trip is enough. "Family trip to Italy — please make it fun and memorable" is a perfectly acceptable brief.
"I have too many photos and videos."
