In 2015, the Campos Varela and Hernández families came together to form the Cordillera de Fuego mill with the intention of processing their own coffees. With decades of coffee experience between them, the partnership grew quickly, expanding into a network of producer partners across the region.

Today, Cordillera de Fuego comprises 250 smallholder producers spanning the microregions of San Ramon and Los Santos in the West Valley. The combined knowledge and experience of the Varela and Hernández families is its own guarantee of quality. They believe that investing in long-term relationships is the key to Cordillera de Fuego’s future. That commitment shows up in their in-house traceability for every producer, from cherry to green coffee—and ultimately in the cup.

We've been purchasing a lot from the group we call Montañas de Fuego—or "Mountains of Fire," named in the spirit of the volcanic mountain range where these exceptional coffees are grown—since 2019. Always approachable and endlessly delicious, this special coffee was an easy choice for our first decaf single origin.

We reached out to our partners at Swiss Water Process (SWP) in Vancouver, B.C. Their chemical-free decaffeination method uses water and carbon filters to gently remove caffeine via osmosis, preserving the coffee's essence while leaving less than 1% caffeine.
