So, what's anaerobic processed coffee?
It's a method in which coffee cherries are fermented in sealed tanks or barrels to create an oxygen-free environment, minimizing the risk of introducing wild yeasts or mold and allowing extended fermentation in a controlled environment. Microorganisms break down the sugars in the cherry, producing organic compounds that often translate to a heavier body and intense fruit notes.
